Gluten Free Breakfast Crepes

A sweet or savory breakfast? Isn’t that the question that plagues you every morning?

Some days I simply can’t make the choice … so I eat both!

Today’s recipe is for gluten free breakfast crepes, a high-protein breakfast delight.

Why You Want This

  • You love French crepes with whipped cream but know that the inevitable sugar crash won’t help you concentrate at work.
  • You can’t decide between an omelette and a pancake. The idea of combining the two has just blown your mind.

Why You Need This

Remember when I told you that the body can only metabolize six teaspoons of added sugar per day? Well, one traditional crepe with maple syrup has 18 grams (four teaspoons) of sugar!

Added sugar isn’t the only culprit. Foods that rank high on the glycemic index (GI) scale, including white flour products such as crepes and pancakes, are rapidly digested and cause substantial fluctuations in blood sugar.

Eating too many high GI foods (those rated 70-100) can lead to:

  • Increased risk for type 2 diabetes
  • Heart disease
  • Weight gain
  • Recent research is also linking high-glycemic diets to ovulatory infertility

Gluten Free Breakfast Crepes (Sweet & Savory)

(Serves One)

You can add any fillings to these crepes. Try using ham, chicken, assorted vegetables, cooked onions, different fruits, quinoa, herbs … the options are endless!

Gluten Free Breakfast Crepes Recipe


  • 2 eggs
  • 4 tablespoons milk of choice
  • 2 teaspoons coconut oil

Savory Filling (per crepe)

  • 2 tablespoons whole milk ricotta or grass-fed cottage cheese
  • 2 tablespoons halved cherry tomatoes
  • small handful baby spinach or arugula
  • 2 tablespoons shredded cheddar cheese

Sweet Filling (per crepe)

  • 2 tablespoons  whole milk ricotta or grass-fed cottage cheese
  • 2 tablespoons organic berries or grated apple
  • cinnamon to taste


  1. Heat one teaspoon coconut oil a small fry pan over medium-high heat.
  2. Crack one egg into a small bowl, add two tablespoons milk and whisk to combine.
  3. Pour egg into frypan and immediately turn heat down to low.
  4. Once the bottom of the egg-crepe has set, swirl the egg mixture around the pan to make a thin layer.
  5. Using a spatula, gently flip crepe over and cook 10 more seconds, or until just set.
  6. Remove egg from frypan and place onto a serving plate.
  7. Repeat with remaining egg and milk to make the second crepe.
  8. Divide fillings in between crepes (choose sweet, savory or make one of each). Roll up and enjoy!
