A Nutty Mango Smoothie

Gosh, this summer has flown by! As the Fall equinox approaches our doorstep, I’m saying a tropical farewell* to warm weekends and long sunny days.

(*Farewell? Who am I kidding, I live in Southern California!)

While I usually choose smoothies that are green and full of veg, like this one,  I will often get a hankering for something sweet and creamy. At times like this my quinoa & mango smoothie ticks all the right boxes.

Mango is one of my favorite summer fruits, but it’s high in sugar so I have paired it with quinoa and almond butter — fat and protein slows the absorption of sugar into the blood stream and keeps you full and satisfied right up until lunch.

If you like a little more protein with your breakfast (the quinoa and almond butter provide about 6 grams) add in half a scoop of vanilla protein powder or serve this smoothie with a soft boiled egg.

Quinoa Mango Smoothie

Ingredients

  • 1/2 cup coconut water
  • 1/2 cup filtered water
  • 1/2 cup frozen mango
  • 1/4 cup cooked quinoa
  • 1 tablespoon almond butter

Directions

Add all ingredients to a high powered blender and blend until smooth and creamy. Add ice cubes or extra water if desired.
